Beef with Asparagus and Mushrooms

If I could post smells instead of pictures on this blog, then today it would be the smell of these vegetables cooking. The asparagus, onion, mushrooms cooking in olive oil, rosemary, garlic and lemon juice were fragrant and made the kitchen smell incredible.

Asparagus being back made me a happy grocery shopper this morning and I had to try it out in this South Beach recipe for Beef with Asparagus and Mushrooms. I’m no fan of the South Beach diet – I’m too much of a carbohydrate lover to follow it but I have found that the website has some really, really delicious, nutrient packed meal ideas.

This dish is very simple – pan-fried steak and sautéed vegetables. The addition of garlic, rosemary and especially the lemon zest takes it from being potentially boring to something to get excited about (unless I’m the only one who gets excited about a good feed?!).  I’ve re-written the recipe here in metric measurements and for 2 portions instead of 4.

Beef with Asparagus and Mushrooms (from the South Beach Diet)

(serves 2)

Ingredients

  • 2 portions of steak
  • 1T olive oil
  • 2t dried rosemary
  • 2 cloves garlic, minced
  • 1/2 onion, roughly diced
  • 1 bunch asparagus, with spears cut into thirds
  • 250g mushrooms, sliced
  • Zest of 1/2 lemon
  • Salt and pepper, freshly ground

Method

1. Score the steak with diagonal lines
2. Rub 1t rosemary, 1 clove garlic into the steak and season with salt and pepper
3. Heat 1/2T of oil over a medium-high heat and fry steak for ~4 minutes on each side (for medium-rare)
4. Cover the meat with foil while preparing the vegetables.
5. Reduce heat to medium and heat the remaining 1/2T of oil
6. Sauté onion for 2 minutes
7. Add remaining garlic and stir through
8. Add mushrooms and asparagus, cook for 5 minutes until asparagus is cooked through but still crisp and mushrooms are turning golden brown
9. Add the lemon zest and remaining 1t of rosemary
8. Season with salt and pepper before serving

If you’re like me and get grumpy with-out some carbs or you’re hungry I’d recommend serving this with some boiled baby potatoes. Mm.

Sesame Beef Stir Fry

When I was growing up, broccoli seemed almost exotic. Our family didn’t eat broccoli at this stage and I always enjoyed it when I had dinner at my best friend’s house. Years later, the novelty hasn’t worn off but I enjoy broccoli for different reasons. I love how it only takes a few minutes to steam and how sauce gets stuck in its little finger bits (I’m sure they have a name, any ideas anyone?!).

This quick recipe is based on the Sesame Beef & Noodles by Women’s Weekly. I have simplified the method a little bit, added more broccoli (yum) and used dried rice noodles instead of fresh rice noodles because they are a lot easier to find and super cheap too. I like that this recipe doesn’t have  a lot of ingredients.

Sesame Beef Stir Fry

(serves 2)

Ingredients

  • 200g beef
  • 1/2t sesame oil
  • 1/2TBSP peanut oil
  • 1 garlic clove, minced
  • 1 broccoli head
  • 100g rice noodles
  • 1TBSP sesame seeds
  • 1/8C oyster sauce
  • 1/8C sweet chilli sauce

Method

1. Coat beef with oils and garlic. Cover and leave to marinate over night
2. Put rice noodles in a large bowl, cover with boiling water until soft (about 3 minutes) then drain
3. Cut broccoli head into florets
4. Simmer broccoli for 1 minute until bright green, drain
5. Microwave sesame seeds at minute intervals until golden brown
6. Stir fry beef over a high heat. When just browned add noodles, broccoli and sauces
7. Serve stir fry sprinkled with toasted sesame seeds

A Tasty Food Explosion

I enjoyed the Cannellini Feta Hummus I made at lunch so much, I had to incorporate it into my dinner last night too. It was another sunny Spring day and my legs were sore from hill intervals on the stationary bike this afternoon so I felt like something pretty light and fast to throw together. The picture looks like it was literally thrown together but it really did taste far more appetising than it looks, I swear!

15-Minute Greek Beef Salad Recipe

(serves 2)

Ingredients

Meat

  • 250g beef schnitzel
  • 1t ground coriander
  • 1/4t chilli powder
  • 1t ground cumin
  • 2t garlic, finely chopped

Salad

  • 4 large handfuls mixed greens
  • 1 punnet cherry tomatoes, halved
  • 2TBSP coriander, chopped finely
  • 1 spring onion, chopped finely
  • (I also used alfalfa sprouts I needed to use up)
  • 1/2 medium cucumber (I didn’t have any but it would’ve worked really well)

Dressing

  • 3TBSP Cannellini Feta Hummus
  • 1TBSP plain unsweetened yoghurt
  • 1tsp lemon juice
  • water to dilute to a pourable consistency if needed
  • 2TBSP sweet chilli sauce
  • freshly ground black pepper

Method

1. Slice beef into strips
2. Massage ground coriander, cumin, chilli & garlic into beef and set aside (I just put the meat back into the meat tray)
3. Place mixed greens on two plates and prepare tomatoes, coriander and chilli
4. Mix hummus dressing ingredients together in a small bowl until smooth, set aside
5. Heat a lug of olive oil over a medium-high heat in a fry pan
6. Fry meat until cooked then add remaining salad ingredients (tomato, coriander and spring onion), toss to combine
7. Place meat mixture on top of mixed greens and top with hummus dressing and sweet chilli sauce
8. Grind over black pepper
